CHARDONNAY, Drinking 2017Produced from a south facing parcel at the extreme south of Les Vaillons with good sun exposure, this unique wine is vinified in a single concrete egg to give an extra layer of complexity. The shape of the egg creates a circulating effect for the lees while the porosity of the surface allows for micro-oxidation, like a barrel but without any woody flavours. A wine which holds itself in reserve when young, this is an intensely refreshing wine with lovely textures which will be delicious in a few years. Drink from 2019.

Nestled between the 1er Cru vineyards of Côte de Léchet and Vaillons in the south-east of Chablis, Domaine Sébastien Dampt stretches over 7 ha of some of the most sought-after terroirs in the region. Sebastien set up his Domaine in 2007, after working closing with his father Daniel and brother Vincent at Domaine Daniel Dampt. A clear superstar of the future, his wines are some of the purest, most ethereal expressions of Chablis – mostly vinified in stainless steel to safeguard the fruit’s nuanced expression of his terroirs.
