Fermentations are with indigenous yeasts, followed by long submerged-cap macerations and patient ageing in large, neutral oak and concrete. He holds his wines longer than most.
The philosophy is simple: interfere as little as possible and allow each vineyard to speak for itself. There are no external oenologists or agronomists; the family relies on its own experience to interpret each site. It is an uncompromising approach, and one that makes the differences between these vineyards increasingly fascinating as you taste through the range.
