Vin de Paille is the region's 'straw wine.' A wine made by concentrating the grapes (Chardonnay, Savagnin and Poulsard) on straw mats to raisins concentrating the flavours. It takes 100 kilograms of grapes to produce just 10 litres of Vin de Paille meaning the wine is very limited. Flavours are rich and concentrated with a flavour spectrum from honey and toasted almonds to lemon rind and baked apple.
