He later founded Domaine de Bellène, with vineyards in Santenay, Volnay, and beyond, and launched Maison Roche de Bellène, sourcing organic grapes from Burgundy’s finest vineyards. A passionate winemaker, Nicolas embraces natural viticulture and now focuses on fewer cuvées to achieve greater precision.
