Sparkling wines are carbonated, either through fermentation or by adding carbon dioxide. Sparkling wine production starts with a base wine, whether that’s a single grape variety or a combination of a few. The wine then undergoes a secondary fermentation, not allowing carbon dioxide to escape under excess pressure. This produces the bubbles sparkling wines are so well known for.Generally thought of for white and rosé varieties, there are some truly unique sparkling wines available.
