Bordeaux is most famous for its red wines, but the other jewel in its crown is the district of Sauternes where some of the world’s most exquisite sweet wines are made. Sauternes, including the Barsac appellation within it, benefits from autumnal morning mists which enable the noble rot, botrytis cinerea, to form on the skins of the grapes. The botrytis fungus concentrates the grapes making it possible for great sweet wines to be made. Sémillon and Sauvignon Blanc are the main grapes used, with the occasional bit of Muscadelle also finding its way into the blend. The best wine cellars in the world should have a space for Sauternes. The most famous sweet white wine of all, Ch d'Yquem can live for well over a century.
