DOMAINE PATRICK JAVILLIER

The Javillier family have long ties to Burgundy but as courtiers (brokers between growers and producers) rather than winemakers. In fact, following training as an electrical engineer it was as a courtier that Patrick started his working life, making wine as an aside from 1974 to 1990. It was in 1990 that he was able to focus his efforts on his vines that he has managed to build up to 10 hectares, by far the majority in Meursault.

His scientific grounding still informs his approach to his winemaking, always thoughtful and with theories of how to improve. In order to achieve the maximum results he vinifies each plot, not just vineyard, separately before extended ageing on fine lees in barrel and then tank. He feels this approach is vital to allow for the long ageing that his fantastic wines deserve. While Cuvee des Forgets can be drunk on arrival, the other two wines will be best left to mature for a further 3-5+ years before opening them. Patrick is a firm believer in blending plots, to equal more than the sum of their parts as with Les Clousots and Tête de Murger. He will match the personalities of each plot to achieve the best balance in the final blend.
