Chardonnay, Drinking 2017
Produced from a south facing parcel at the extreme south of Les Vaillons with good sun exposure, this unique wine is vinified in a single concrete egg to give an extra layer of complexity. The shape of the egg creates a circulating effect for the lees while the porosity of the surface allows for micro-oxidation, like a barrel but without any woody flavours. A wine which holds itself in reserve when young, this is an intensely refreshing wine with lovely textures which will be delicious in a few years. Drink from 2019.
